The science behind candyflossWhen you pour sugar into the centre of a cotton candy machine, the coils inside heat the sugar to its melting point and break the bonds of the constituent molecules. The hydrogen and oxygen atoms rearrange to form water molecules and promptly evaporate, leaving only carbon behind. The carbon burns and the sugar begins to caramelize.

Candy floss has different names around the world. In America, it’s called ‘Cotton Candy’. In Australia and Finland, it’s called ‘Fairy Floss’. In the Netherlands, it’s known as suikerspin, which means “Sugar Spider.” And in France, it’s called barbe à papa, which means ‘Papa’s Beard’.
